Cottage Pie...using what you have

This morning I've prepared cottage pie for tea. My shopping comes later this afternoon so I'm a bit low on fresh veg. Everything is ready to go, then all I need to do is a bit of stirring and assembling.


In the pan I put...
Mince, a chopped onion, 4 chopped carrots, a sprinkle of parsley and a few dashes of Worcester sauce. This is ready to go. After browning, I will add the oxo and boiling water, then the frozen mixed veg. The potatoes will be boiled and mashed too. After cooking the mince, it will be put into an oven dish with the beans stirred through. I will top with mash and sprinkle a little grated cheese on top. It then goes in the oven or under the grill. I cook the mince on top of the cooker to save electricity. 

I will share a photo of the finished product tomorrow! 

So simple, but so tasty! All in one dishes are really good when there's not a lot of fresh veg in the house. 

I tend not to stockpile anymore and stick to my meal plan and shopping list. I've found that this works well for us now. If anyone is interested in seeing my meal planning and groceries, please comment below.

  1. Hi Mandy, hope you are well? I've been a bit of a sporadic blogger of late but I always look out for you. I'm not doing great with the shopping at the moment, it just seems to be so expensive and I only use Asda or Lidl. I do buy a box of wine a week for £12-14 depending on offer but not loads of goodies really . Oh well, it is what it is I guess. We are both on a bit of a health kick having given up smoking (disgusting habit) and trying to eat good food, lots of chicken, fish, veg and fruit but it really is more expensive. I do love a cottage/shepherds pie but not even having many potatoes recently. Will probably top with swede and sweet potato instead. Love cheese here too but that's out for now too. Anyway, lovely to see your post. Xxx

    1. Good to hear from you too! I'm ok, just had a lot on my mind lately. I've also struggled with blogging...I just haven't had anything to write about! I'm trying to get back into it though. Gosh you are being healthy...well done xx

  2. Nice to see a post from you Mandy, I've missed your blog. I too pad out mince to make it stretch further......if I don't have any of the frozen diced mixed veg, I use 2 or 3 large carrots grated, plus a couple of handfuls of red lentils, and a tin or 2 of chopped tomatoes. Along with the oxo I use a heaped tsp of yeast extract for added beefiness.

      I don't like lentils or chopped tomatoes but have always put a tin of baked beans in x

  3. Hi there Mandy, Like you I often get everything ready to cook. I usually do it straight after lunch, then I am still in the kitchen and do not feel it is a chore. As I am retired I sometimes have a little nap in the afternoon so if I wake after four I still have time to get the dinner on. I am also thinking of letting my store cupboard run down, then I can meal plan and buy just what I need. I think this idea of having lots in the store cupboard comes from the 60's and 70's when I had a family to feed and very little money. Today the bulging cupboards feel like insurance but last time I had a good look some of the food had gone way past its use by date, that is not good economy. I love your blog and I think you are doing a great job with your little grand daughter, it is not easy starting all over again. Enjoy the May holiday. Love Andie xxx
