What I've Baked Wednesday...

Hi everyone,

A late post today because I have been so busy! I have baked though...

Lemon Cake


Not a very good photo! This is the lemon cake left plain how my hubby likes it. Daisy made her own lactose-free version (with a little help from auntie Charlotte) and decided to throw in her snacking raisins to improve the recipe! I also iced one cake and cut into squares...


Yeah it did run over the edges a little but it's fine!


Cut up and ready to eat. Here's the recipe...

225g marg
225g caster sugar
4 eggs
275g self-raising flour 
2tsp baking powder
2tbsp milk
Juice of 2 lemons (save a bit back for the icing)

Icing sugar and lemon juice to make icing

Oven 180oC for 40 mins

Wednesday is now baking day!

What I've baked Wednesday...

Hi everyone

Not much baking been going on here lately but I did make fruity fairy cakes with Daisy today...or if I'm honest...Daisy did most of it and I just supervised, took care of the oven side of things and tidied up the floury mess!

A really simple recipe of...

100g butter
100g caster sugar
2 eggs
100g self-raising flour 
A good sprinkling of raisins

Daisy even cracked the eggs with me! So proud she did that for the first time today and only a tiny bit of shell went in the bowl.

Fresh out of the oven she had to test one    And so did grampy (as you can see in the photo)...

Finding the time to blog in May...

I thought I'd better make time to blog before May is over!

I'm always busy (like everyone else is), but May seems to be flying by. Daisy is teething with teeth numbers 5 and 6 and struggling with them this time. 1-4 just popped out of her gums with no fuss, but she is suffering at the moment and needs lots of cuddles and something hard to bite!

We've seen the Health Visitor and Daisy is growing! She weighs 15lb 3oz and still under the 9th centile (which is small), but consistent, so everything is fine, thank God. Weaning is progressing and she had her first taste of scrambled egg for tea yesterday. She wasn't sure about the texture, so next time I will serve it with some blitzed tomatoes to make it more exciting for her. She now has weetabix for breakfast too. We are managing more and more family food and she will have an adjusted version with no salty gravy or dairy. She loves her soya yogurt and cream and has even got soya vanilla ice-cream!

We've been to a couple of carboot sales (will blog about all my purchases later) and we celebrated our 12th wedding anniversary. I've managed to get on top of the housework now and have an ever growing pile of things, stuff to get rid of. Most of these will be taken to a carboot (when I've got time) as I haven't bothered ebaying for a while. Having less stuff around the house has made it easier to clean, so when I do buy something, I think about it more - I don't want to fill the house up again! My daughter sold at a carboot this month, so I have four more things to add to my declutter challenge:

49.   child's book

There is still a lot of work to be done here and I'm waiting for a charity bag to come through the door, hopefully from the air ambulance because they take everything including bric-a-brac.

I've been keeping up with my home cooking a lot better (which is good news for Daisy), using my meat stash in the chest freezer. This is what I've used so far:

  • chicken - curry and Chinese (none left)
  • mince - spag bol x 3, cottage pie and lasagne (5 left)
  • sausages - with new potatoes, bangers and mash and a fry up (none left)
  • pork - not used yet (2 left)
  • beef - casserole (3 left)
  • lamb - not used yet (2 left)
  • bacon - fry up, quiche, pasta, sandwiches x 3 (2 left)

Other meals have been meat-free or made using meat that was already in the freezer and not part of my challenge. So far, I have made 16 meals from my meat stash and there are plenty more to come.

An area where I felt I was failing was my cake tins. I love having them full and on display (they are Emma Bridgewater hearts), but lately they've been tucked away in the cupboard. On Sunday Grampy took Daisy for a walk in her pram around the village and I managed to bake (I love it) some cakes. I made chocolate chip brownies, chocolate chip cookies, oat cookies, a victoria sandwich and two dozen fairy cakes. We have lacked in the homemade cake variety so much, that we have already made quite a dent in them! They are taken in packed lunches and I have some with my lunch. We also had chocolate brownies and ice-cream for pudding on Sunday.

Finding things in the freezer I forgot I had...

Hi everyone,

Just lately I haven't found time to bake.

I have even bought cake from the supermarket!

This IS NOT good money saving!!!

Yesterday I went to my freezer to get a loaf out and came back with a coffee sponge and fruit cake. I batch baked some time ago (probably put photos on my blog) and these items had been buried under frozen veg. I was so happy to provide my husband and daughter with cake for their packed lunches.

You see I had thought ahead if things got too hectic to bake - I'm just so tired that I totally forgot I had been organised!

A lesson has been learned here - keep the freezer organised (which I normally do) by putting the new shopping away properly instead of piling it on top of what's already there.

I wonder what else I will find lurking at the bottom of my chest freezer???

Thrifty shopping and stocking-up the cupboards...Approved food

Approved Food Order

Hi, I have not had any time to blog lately because of our new arrival in the family. Little Daisy-May has turned our lives upside down (in a good way) and left no time for stuff like blogging. She is 6 weeks old now and absolutely perfect! Alice's pre-eclampsia has finally gone and she is feeling much better. I had forgotten just how much time is taken up looking after a new baby, but we are trying to get into a routine now. I did manage to make an Approved Food order last week...



There are all kinds of cupboard fillers here. I particularly stocked up on tins and packets for easy quick meals when I need extra time. I normally spend quite some time in the morning preparing the evening meal ready to be cooked later in the day, as I think it's important to cook from scratch.

Some items are to help me fill my chest freezer. I bought chocolate cake mix (even though I am quite capable of baking a cake) because cocoa is so expensive. This sack retailed at £14.99 and I bought it for £4.99. To me this is a bargain because my children loved the chocolate muffin mix we had before and I can fill the freezer really cheaply with cake for packed lunches and ready for pudding - chocolate pudding and chocolate custard : )

This is a good way of shopping for standby meals and so cheap. I only ever buy items in date which does prevent me from getting some fantastic bargains, bit it's an area I can't be frugal on.

I made 6 chocolate sponges earlier today, so I'll let you know how they taste!

I've been sewing!

I've just completed my first piece of sewing! I've made a sausage dog draught excluder. Sorry no photo yet because my old digital camera has given up on me now. I've got my fingers crossed for a new one for my birthday (on Monday) X

Alice came to see me this morning - she went to the doctor and her chest is still bad.

After I'd done a bit of sewing, I decided to bake a cake (again sorry no photo), a chocolate cake :-)

For tea, I made a beer batter and fried some fish. It was lovely.

Tomorrow I think I might sew some more - another sausage dog for another door.
